Watermelon Halloumi Salad

Juicy, sweet watermelon takes center stage in this refreshing Watermelon Halloumi Salad that’s perfect for the summer.

Watermelon has always had my back during the summer, and it definitely isn’t letting me down this year. It’s just the perfect companion on hot summer days! Whether it’s by the pool, a lake, or even the weirdest of places- any way you slice it watermelon is by far one of the most delicious ways to stay cool and hydrated.

Watermelon makes a great addition to any salad and adds a crisp freshness that is perfect for the summer heat. In this summer salad recipe, we’ve combined juicy watermelon with tangy halloumi cheese. 

Halloumi Cheese is unique in that it holds its shape when cooking, making these cheese “croutons” that pair perfectly with crisp watermelon.

Watermelon Halloumi Salad

This juicy, sweet, and refreshing watermelon salad is the perfect summer staple!
Course Salad

Ingredients
  

  • 1 block Halloumi sliced into 1/4 inch thick pieces
  • 1 tbsp olive oil
  • 4 cups cubed watermelon
  • 4 cups arugula
  • 1/2 cup mint leaves torn
  • 2 tsp za'atar
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • Sea salt and pepper to taste

Instructions
 

  • Brush each slice of halloumi with olive oil.Season with salt and pepper.
  • Heat a nonstick grill pan over medium heat.
  • Add the cheese to the pan, cook for 2-3 minutes on each side, or until you get grill marks.
  • Set aside.
  • Combine halloumi, watermelon, arugula, and mint. Sprinkle with za’atar, lemon juice and additional olive oil.
  • Enjoy!
