Have you guys heard of jackfruit before?
I loved munching on fresh jackfruit when travelling in SE Asia. When fresh, they are crazy sweet and taste a little like bubblegum. A bit (a lot) messy to eat, but so sweet you just wouldn’t care. But it’s not easy to find fresh here in North America.
Nowadays, it’s relatively easy to find canned jackfruit (in brine!!) in the grocery shop.
Jackfruit is a vegan revelation.
It absorbs just about any flavor you throw its way and has the craziest texture to boot. Get this- it’s like shredded meat. The perfect meat substitute.
A lot of people like to use jackfruit to make vegan-friendly pulled pork sandwiches, but we’re going to be adventurous as usual so bring out the buffalo sauce! Mix in a few white beans and we’ll get that meat-like texture in no time. Your family won’t even know the difference!
What jackfruit lacks in protein, it makes up for with plenty of fiber and potassium. You’re definitely not going to be missing out on the good stuff.
This White Bean and Jackfruit Buffalo Burger is so easy to make, the hardest part is probably finding the fruit itself. If your jackfruit search starts to feel a little hopeless, check the local Asian grocer! There’s bound to be plenty. If they don’t have any canned ones, look out for a big, green fruit textured with little bumps.
A heart vegan burger recipe, filled with fiber, plant proteins, and a touch of spice. Serve with your favourite tangy dressing and a side of celery and carrot sticks.

White Bean and Jackfruit Buffalo Burger
Total Time: 30 mins
Servings: 4 patties
Ingredients
- 1 – 565g tin young jackfruit, drained
- 1- 400g tin, white or butter beans, drained
- 1/4 cup buffalo sauce (60ml)
- 2 Tbsp vegan mayo
- 1 tsp smoked paprika
- 1 clove garlic, minced
- 1 Tbsp nutritional yeast
- 1 1/2 Tbsp psyllium husk
- 1/4 cup oat flour (30g)
- 1 Tbsp olive oil
Instructions
- Roughly chop drained jackfruit, transfer to a medium bowl.
- Using a food processor or blender, pulse beans until broken down.
- Add beans to jackfruit. Add buffalo sauce, mayo, paprika, garlic, and nutritional yeast. Stir to combine.
- Add psyllium husk, stir well. Let sit for 10 minutes.
- Divide into 4, shaping patties with your hands.
- Dip in oat flour.
- In a sauce pan, heat olive oil. Cook patties until golden brown on each side.
- Serve with blue cheese and an extra dollop of buffalo sauce.
