For better or for worse, football season is here. And when your husband is from Buffalo, chances are you are donning red and blue and covered in Buffalo Sauce. And if you’re a dietitian married to a Buffalonian, you’re making Buffalo Cauliflower.

I never understood Buffalo Sauce until I visited Buffalo for my first time. On that first visit, I was hooked. For those of you who don’t know, there’s a rivalry between two establishments: Duff’s and Anchor Bar. Now I’ve really only been to one, got sauce all over my dress, ate a lot of fried pickles and didn’t feel so hot.

So I can’t be the judge of this debate. I do, however, frequently purchase sauce at the local shop and DIY my game grub. And here’s my choice: Anchor Bar medium is where it’s at my friends. There. I said it. Step aside Frank’s RedHot.

Let the debate begin.

Regardless if you’re a Frank’s RedHot lover, Duff’s or Anchor Bar fan, the tangy spice of Buffalo Sauce is hard to resist. If you, like me, aren’t a wing person, you’ve likely jumped on the Buffalo Cauliflower bandwagon. And I don’t blame you! I love them – but truthfully they’re kind of a pain to make.

That’s why I’ve made a fuss-free Whole Roasted Buffalo Cauliflower that, dare I say it, looks fancy AF.

Topped with an avocado blue cheese dressing, it’s got all the flavours of game day with less mess, and more veg.

Whole Roasted Buffalo Cauliflower With Avocado Blue Cheese Dressing

Prep time: 1hr

Make buffalo cauliflower with less the mess – a cooling avocado blue cheese dressing tops this show stopping dish off!

Ingredients

  • 1 tablespoon olive oil
  • 1 head cauliflower
  • 1 teaspoon smoked paprika
  • 1/4 cup buffalo sauce (60ml)
  • ¼ ripe avocado
  • 1/4 cup blue cheese (50g)
  • 1/4-1/3 cup kefir (60-90ml)
  • Juice of 1 lemon
  • To serve
    Spring onions chopped
  • Celery chopped

 

Instructions

  • Preheat oven to 220C/425F. Line a baking tray with paper.
  • Steam the cauliflower: arrange a steamer basket in a saucepan with 1-2 inches of water. Place whole cauliflower in basket, cover and let steam for 8-10 minutes, or until just tender.
  • Removed cauliflower from steamer.
  • In a small bowl, combine olive oil, paprika and buffalo hot sauce. Spread evenly over the cauliflower.
  • Roast cauliflower for 20-25 minutes or until tender.
  • Make the dressing: combine all ingredients in a food processor or blender.
  • Serve cauliflower with additional sauce, blue cheese dressing, chopped spring onions and celery.
