For a quick and easy dish that’s a great accompaniment to pretty much everything, try this Za’atar Roasted Cauliflower with Tahini!
Let me tell you now, this is one of my favorite go-to vegetarian dinner ideas. I like to top my roasted caulis with za’atar, a Middle Eastern spice blend made of thyme, oregano, and salt. Roasted cauliflower tossed in a mixture of Middle Eastern spices, with a smooth sesame tahini sauce. It’s a healthy side dish or snack to make for any occasion!
Cauliflower is a blank slate that can easily take on whichever flavors it’s paired with, making it the perfect vegetable for roasting. It also happens to be lower in carbs than traditional potatoes, which makes this dish great for anyone eating low carb or keto. Full of flavor and nutrients while being low in calories and carbs, this meal is sure to become one of your new favorites.

Za’atar Roasted Cauliflower with Tahini

Serves: 3-4
Ingredients
- 1 head cauliflower, cut into 1 inch “steaks”
- 2 tbsp olive oil
- 2 tbsp za’atar
- 1 tsp sumac
- ¼ cup tahini
- Juice of 1 lemon
- Sea salt and pepper, to taste
Preparation:
- Preheat the oven to 450F.
- Drizzle the cauliflower with oil, and sprinkle with za’atar, sumac, salt and pepper.
- Roast for 25 minutes, flipping halfway through, or until golden and tender.
- Drizzle with tahini and lemon juice.
