Watermelon Halloumi Salad
This juicy, sweet, and refreshing watermelon salad is the perfect summer staple!
- 1 block Halloumi sliced into 1/4 inch thick pieces
- 1 tbsp olive oil
- 4 cups cubed watermelon
- 4 cups arugula
- 1/2 cup mint leaves torn
- 2 tsp za'atar
- Juice of 1 lemon
- 1 tbsp olive oil
- Sea salt and pepper to taste
Brush each slice of halloumi with olive oil.Season with salt and pepper.
Heat a nonstick grill pan over medium heat.
Add the cheese to the pan, cook for 2-3 minutes on each side, or until you get grill marks.
Set aside.
Combine halloumi, watermelon, arugula, and mint. Sprinkle with za’atar, lemon juice and additional olive oil.
